Cranberry/Orange Cabbage Salad
- 1 head green cabbage
- ½ cup dried cranberries
- ½ cup chopped pecans or slivered almonds
- 1 green apple, cored and chopped
- 1 cup mandarin orange sections
- ½ lemon
Dressing*:
- 2 T salad oil (rice bran, almond, Enova, canola or walnut oil)
- 2 T white wine vinegar
- 1 t honey
- 1 t prepared mustard
1. Thinly slice cabbage and place in large bowl (or use pre-shredded cabbage, found in most grocery stores in the produce department).
2. Add dried cranberries, pecans, apple and mandarin orange sections.
3. Squeeze lemon juice over top to prevent apple from browning.
4. In separate bowl, combine dressing ingredients.
5. Pour dressing over salad and stir to coat evenly.
6. Serve chilled.
* If desired and time is a factor, buy prepared honey mustard vinaigrette salad dressing. Most vinaigrette dressings work well with this salad.
