Holiday Honey Pork Tenderloin

Tenderloin

  • 1 Pork tenderloin
  • Apple (peeled, and diced)
  • Red onion (diced)
  • Mushroom (your choice of type)
  • Garlic (minced)
  • Salt and pepper

Glaze

  • Honey
  • Mint (chopped)
  • Cayenne


1. Preheat oven to 350 degrees.

2. Gently cut the tenderloin along the bottom and roll out the tenderloin as you continue to make cuts until the tenderloin is a single flat sheet.

3. Take the mushrooms, apple, onion, and garlic and sauté, adding a small amount of salt and pepper.

4. Spread the sauté mixture out over the tenderloin.

5. Roll the tenderloin and place it on a sheet pan with the seam side down.  Cover with foil and place in the oven.

6. Gently heat the honey in a saucepan until it becomes a more liquid texture.

7. Add a pinch or two of cayenne and some chopped mint leaves to the honey.

8. When the internal temperature of the tenderloin is around 145 degrees, remove the foil and baste the tenderloin liberally with the honey glaze.  Repeat every five minutes until the internal temperature of the tenderloin is 155 degrees.

9. Slice, serve, and savor the flavor!
