Mini Vegetable Pizzas

  • Vegetable cooking spray
  • ¼ cup thinly sliced mushrooms
  • 2 tablespoons chopped onion
  • 1/3 cup chopped spinach
  • 1 teaspoon dried basil
  • 1 (8-ounce) jar pizza sauce
  • 8 mini whole wheat pitas
  • 2 tablespoons finely chopped red pepper
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese
  • Grated parmesan cheese


1. Place pitas on a baking sheet. Spread 1 1/2 tablespoons sauce over each.

2. Top pitas with equal amounts of pepper, mushroom, onion, spinach, and cheese. Add a dash of basil.

3. Bake at 400° for 6-8 minutes, or until cheese melts.

4. Sprinkle grated parmesan on top and serve.
