Salmon With Grapefruit

  • 1 pound wild, Alaskan salmon, cut into 4 pieces
  • 2 t. extra-virgin olive oil
  • ½ cup sweet onion, minced
  • ¾ cup grapefruit juice, pink or ruby red
  • Grapefruit wedges for garnish

Preparation

1. In a nonstick skillet, heat the olive oil and sauté the onions for 2 minutes.

2. Add salmon and grapefruit juice to the skillet.

3. Cover skillet and steam until the salmon is opaque, about 6-8 minutes.

4. Remove from heat, plate, and garnish with grapefruit wedges.
